Crispy Baked Prawns

This makes for a quick lunch or dinner, or add them to some pasta for a quick hearty meal. Hopefully, you already have your favorite Margot's Morsels in your pantry. If not, stock up on Crazy Crumbs so delicious and can be used instead of those old packaged crumbs that may be sitting in your pantry.

 

  • ⅓ cup Crazy Crumbs or, your favorite Margot's Morsels (garlic, rosemary, parmesan or sea salt), crushed
  • 3 tablespoons olive oil, divided
  • 1 ½ pounds jumbo peeled, deveined raw shrimp (8-12 count), tail-on or prawns
  • ¼ teaspoon ground pepper
  • ⅛ teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely chopped garlic
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives
Preheat your oven to 425 degrees F. Coat the bottom of a glass, ceramic or enamel-coated baking dish with 1 tablespoon oil. Pat shrimp/prawns dry; place in a single layer in the prepared baking dish. Sprinkle them evenly with pepper and salt.
Whisk butter, lemon juice and garlic in a small bowl; pour the mixture evenly over the shrimp. Add Parmesan, chives and the remaining 2 tablespoons oil to a small bowl with the crumbs; stir to combine. Sprinkle the mixture evenly over the shrimp. Bake until the shrimp are pink and cooked through, 8 to 10 minutes.
As winter approaches, prepare some buttered pasta and lay the prawns on top and finish with more parmesan cheese and fresh chives or parsley for a quick and comforting dinner.
