This makes for a quick lunch or dinner, or add them to some pasta for a quick hearty meal. Hopefully, you already have your favorite Margot's Morsels in your pantry. ⅓ cup Crazy Crumbs or, your favorite Margot's Morsels (garlic, rosemary, parmesan or sea salt), crushed

3 tablespoons olive oil, divided

1 ½ pounds jumbo peeled, deveined raw shrimp (8-12 count), tail-on or prawns

¼ teaspoon ground pepper

⅛ teaspoon salt

2 tablespoons unsalted butter, melted

2 tablespoons fresh lemon juice

1 tablespoon finely chopped garlic

¼ cup grated Parmesan cheese

2 tablespoons chopped fresh chives
Preheat your oven to 425 degrees F. Coat the bottom of a glass, ceramic or enamel-coated baking dish with 1 tablespoon oil. Pat shrimp/prawns dry; place in a single layer in the prepared baking dish. Sprinkle them evenly with pepper and salt.
Whisk butter, lemon juice and garlic in a small bowl; pour the mixture evenly over the shrimp. Add Parmesan, chives and the remaining 2 tablespoons oil to a small bowl with the crumbs; stir to combine. Sprinkle the mixture evenly over the shrimp. Bake until the shrimp are pink and cooked through, 8 to 10 minutes.
As winter approaches, prepare some buttered pasta and lay the prawns on top and finish with more parmesan cheese and fresh chives or parsley for a quick and comforting dinner.
